US Department of Agriculture (USDA) has passed legislation for labeling the eggs sold to consumers with a grade, called as the USDA Grade shield.

With the new law of labeling the eggs, the authorities expect to offer better quality to the customers

Under the new regulation, the authorities will determine the egg quality by evaluating each egg for interior and exterior factors.

The egg samples will be candled under a bright light to allow the USDA grader to see the contents of the egg for any internal or external defects.

The grader will categorize the eggs into one of three consumer grades including Grade AA, Grade A and Grade B.

Grade AA and Grade A eggs will be most used for sales in the retail grocery outlets, while the Grade B eggs will be allowed to be used as breaking stock as well as in baking activities.

As part of the regulation, the producers will also be liable to label each carton of USDA graded eggs representing the date of packaging, the processing plant number, as well as an expiration date.

According to the USDA, the coding on the egg cartons will help the users including chefs and bakers to determine the freshness of the eggs.
